Brief Description
The proposal is to develop two dairy farms, in the Normandien district (Newcastle Local Municipality) with enough capacity to sustain a cheese factory. It is important to emphasise that the quality of cheese is extremely dependant on the quality of raw milk produced, and the ideal situation is to begin processing the product immediately after milking, this can only be achieved if the factory is adjacent to the main milking parlour. Savings will also be made on transport cost and storage facilities.
The current dairy farms identified are each capable of producing 10 000 litres per day. The factory capacity however will be planned for a greater capacity with the potential for expansion, so that further dairy farms can be accommodated thus bringing the production up to the factory capacity of 60 000 litres per day  The co-op will be the owner of both the farms and the factory. Membership of the co-op will be divided between +/- 30 farm employees and the two farm owners, who will provide management expertise and mentorship.
